Combine oil, vinegar, shallots, rosemary, garlic, salt and pepper. Whisk until evenly mixed.
Pour the marinade over the meat in a plastic bag and refrigerate for at least 3 hours, or up to 24 hours.
Preheat your grill to medium heat.
Skewer the beef and mushrooms. Depending on how much meat you have, skewer two pieces of beef for every one mushroom.
Cook the skewers over medium heat for approximately 5 minutes per side. Adjust the cook time to your taste – less time per side for rare/medium-rare, more time for well-done.
